Provenance Farms Leg of Lamb is a versatile centerpiece cut prized for its tender texture, balanced flavor, and dramatic presentation. Pasture-raised lamb offers clean, mineral sweetness and refined fat that responds beautifully to roasting, grilling, or slow braising. The leg can be cooked bone-in for show and moisture retention, or boneless for easier carving and butterflying on the grill.

Raised outdoors on regenerative pasture, never grain-finished, never treated with antibiotics or synthetic growth promotants. Halal certification available on request. Ships nationwide.


🍽️ RECIPE #1 — CLASSIC ROAST LEG OF LAMB (GARLIC & ROSEMARY)

Serves: 6–8
Total Time: ~2 hours

Ingredients

  • 1 Provenance Farms Leg of Lamb (bone-in or boneless)
  • 2 Tbsp kosher salt
  • 1 Tbsp black pepper
  • 6 cloves garlic, sliced
  • 2 Tbsp chopped rosemary
  • 1 Tbsp thyme
  • 3 Tbsp olive oil
  • Zest of 1 lemon
  • Method
  1. Bring Provenance Farms lamb to room temperature for 45–60 minutes.
  2. Preheat oven to 425°F.
  3. Score fat lightly; insert garlic slivers into small cuts.
  4. Rub with olive oil, salt, pepper, rosemary, thyme, and lemon zest.
  5. Roast at 425°F for 15 minutes to develop crust.
  6. Reduce heat to 350°F and roast to internal temp of 130–135°F (medium-rare), typically 1½–2 hours depending on size.
  7. Rest 20 minutes before carving.
  8. Serve With: roasted potatoes, wilted greens, white beans, or mint salsa verde.

🌿 RECIPE #2 — MEDITERRANEAN BUTTERFLIED GRILL LEG (HERBS & LEMON)

Ideal for boneless leg.

Ingredients

  • Provenance Farms Boneless Leg of Lamb (butterflied)
  • Olive oil
  • Lemon zest + juice 
  • Garlic, minced
  • Fresh oregano + parsley
  • Salt & pepper

Method

  1. Marinate Provenance Farms lamb 2–4 hours (or overnight).
  2. Grill over medium-high heat, turning occasionally, 25–35 minutes depending on thickness.
  3. Rest 15 minutes; slice across the grain; finish with lemon + herbs.

Flavor Profile: bright, herbaceous, slightly smoky — excellent for spring/summer menus.

Martha’s journey from professional kitchen to regenerative farm began with a simple conviction: food should nourish both families and the land that produces it. With 25 years of culinary training from the CIA, she knew quality, flavor, and the value of exceptional ingredients. But after encountering 168 acres of chemically damaged soil, she realized her true calling was healing the land that grows our food.

Today, Martha applies the same precision she brought to fine dining to raising cattle that consistently grade Choice to Prime on a 100% grass-fed diet. Her dual expertise as chef and farmer ensures every animal is finished to restaurant standards while contributing to soil regeneration. “Every cow we raise is one less CAFO cow,” Martha says. “Every family we serve experiences what food tastes like when it comes from truly healthy soil.”

Can you deliver?

Yes! We offer free delivery within 15 miles of our farm in Fordland, Missouri. For 16-30 miles, there's a $25 delivery fee. For longer distances, we can arrange special delivery for larger orders.

Do you use antibiotics or hormones?

Never. Our cattle are raised without antibiotics, growth hormones, or chemical treatments of any kind. Healthy cattle raised properly don't need these interventions.
