Ingredients

For the sandwich

  • Thin sliced leftover roast beef
  • Good bread (sourdough, ciabatta, or country loaf)
  • Arugula or greens (optional)
  • Caramelized onions (optional but recommended)
  • Pickles or sliced tomato
  • Salt and pepper

Garlic aioli

  • ½ cup mayonnaise Optional: drizzle olive oil
  • 1 small garlic clove, finely grated
  • 1 tsp lemon juice
  • Pinch salt

Instructions

  1. Stir together aioli ingredients and let sit 5–10 minutes so flavors develop.
  2. Toast bread lightly — this adds structure and warmth.
  3. Spread garlic aioli generously on both sides.
  4. Layer roast beef, onions, greens, and toppings.
  5. Season lightly and serve.

Warm the sliced beef briefly in a splash of broth — never microwave dry — to keep it tender and juicy.
