  • 3–4 lb beef roast (chuck or arm)
  • Salt and pepper
  • 1 onion, chopped
  • 4 carrots
  • 3 potatoes
  • 2 cups broth
  • Fresh herbs (thyme or rosemary)

Instructions

  1. Preheat oven to 300°F.

  2. Season roast generously.
  3. Place vegetables in roasting pan.
  4. Add roast and pour broth around.
  5. Cover and cook 3–4 hours until tender.
  6. Rest 15 minutes before slicing.
