Red Wine & Herb Braised Chuck Roast

Ingredients (serves 4–6)

  • 1 Provenance Farm chuck roast (3–4 lb)
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 2 tbsp tallow or butter
  • 1 large onion, sliced
  • 3 carrots, chunked
  • 3 celery stalks, chunked
  • 4 cloves garlic, smashed
  • 2 tbsp tomato paste
  • 1 cup red wine (or extra broth)
  • 2 cups beef broth
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 2 bay leaves

Optional:

  • potatoes or parsnips
  • splash of apple cider vinegar

🍲Method

1. Season generously

Salt the roast at least 30 minutes before cooking (overnight is even better).

2. Sear for flavor

Heat a Dutch oven until hot.
Add tallow/butter and sear roast deeply on all sides — dark brown crust = big flavor.

Remove and set aside.

3. Build the base

Add onions, carrots, celery, and garlic.
Cook until lightly caramelized.

Stir in tomato paste and toast 1–2 minutes.

4. Deglaze

Pour in red wine and scrape up all the browned bits (that’s the good stuff).

Add broth + herbs.

5. Slow braise

Return roast to pot. Liquid should come halfway up the meat.

Cover and cook:

  • Oven: 300°F for 3–3½ hours
    or
  • Slow cooker: low 7–8 hours

Until fork-tender.
