PRODUCT DESCRIPTION — LAMB SHANK

Rich, silky, and deeply flavorful, Lamb Shanks are one of the most rewarding cuts to braise low and slow. Pasture-raised lamb develops sweet, clean fat and refined mineral notes that transform into velvety sauce as the shank’s collagen melts. This is the cut chefs turn to for braises, stews, tagines, and holiday centerpieces with fall-off-the-bone tenderness.

Raised outdoors on regenerative pasture, never fed grain, never treated with antibiotics or synthetic growth promotants. Halal certification available on request. Nationwide shipping available.


🍷 RECIPE — RED WINE & ROSEMARY BRAISED LAMB SHANKS

Serves: 2–4
Active Time: 20 min
Total Time: 2½–3 hours

Ingredients

  • 2 Lamb Shanks
  • 1 Tbsp kosher salt
  • 1 tsp black pepper
  • 2 Tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, smashed
  • 2 cups red wine
  • 1 cup beef or chicken stock
  • 2 sprigs rosemary
  • 2 bay leaves
  • Optional: zest of 1 orange for finish
  • Method
  1. Preheat oven to 300°F.
  2. Season shanks generously with salt + pepper.
  3. Brown on all sides in a heavy Dutch oven with olive oil.
  4. Add vegetables and garlic; cook 5 minutes until softened.
  5. Deglaze with red wine; reduce briefly.
  6. Add stock + herbs; liquid should come halfway up the shanks.
  7. Cover and braise 2½–3 hours or until tender.
  8. Reduce braising liquid to glossy sauce; finish with orange zest or butter.

Serving Ideas: mashed potatoes, polenta, beans, risotto, couscous, or warm greens.

Martha’s journey from professional kitchen to regenerative farm began with a simple conviction: food should nourish both families and the land that produces it. With 25 years of culinary training from the CIA, she knew quality, flavor, and the value of exceptional ingredients. But after encountering 168 acres of chemically damaged soil, she realized her true calling was healing the land that grows our food.

Today, Martha applies the same precision she brought to fine dining to raising cattle that consistently grade Choice to Prime on a 100% grass-fed diet. Her dual expertise as chef and farmer ensures every animal is finished to restaurant standards while contributing to soil regeneration. “Every cow we raise is one less CAFO cow,” Martha says. “Every family we serve experiences what food tastes like when it comes from truly healthy soil.”

Can you deliver?

Yes! We offer free delivery within 15 miles of our farm in Fordland, Missouri. For 16-30 miles, there's a $25 delivery fee. For longer distances, we can arrange special delivery for larger orders.

Do you use antibiotics or hormones?

Never. Our cattle are raised without antibiotics, growth hormones, or chemical treatments of any kind. Healthy cattle raised properly don't need these interventions.
