Crispy Cornmeal Oven-Fried Chicken Wings

Pasture-Raised Wings with Farmhouse Ranch Dip

Gets so crispy, all without deep-frying. This is the ultimate comfort food made a little lighter — and a lot more flavorful — thanks to Provenance Farm’s pasture-raised chicken.

Ingredients

For the Wings

  • 1 large egg
  • ½ cup milk
  • 1 cup all-purpose flour
  • 4 tbsp coarse cornmeal
  • ½ tsp baking powder (NOT baking soda)
  • ½ tsp sea salt
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¾ tsp fine ground black pepper
  • Olive oil, to coat the pan
  • 2 lbs Provenance Farm chicken wings

For the Homemade Ranch Dressing Dip

  • 1 clove garlic
  • ¼ tsp kosher salt
  • 1 ¾ cups real mayonnaise
  • ¼ cup Italian flat-leaf parsley leaves, minced
  • 2 tbsp fresh dill, minced
  • 1 tbsp minced fresh chives
  • 2 tsp soy sauce or coconut aminos
  • ½ tsp ground black pepper
  • 1 tsp white vinegar
  • ¼ tsp paprika
  • ⅛ tsp cayenne pepper
  • Dash of hot sauce
  • ¼–½ cup milk (for desired consistency; dairy or cashew milk works well)

Directions

Oven-Fried Chicken Wings

  1. Preheat the oven & pan
    Preheat your oven to 425°F. Place a heavy-bottomed baking sheet in the oven while it preheats so the pan gets very hot.

  2. Mix the dry ingredients
    In a medium bowl, whisk together the flour, cornmeal, baking powder, sea salt, smoked paprika, garlic powder, onion powder, and black pepper.

  3. Mix the egg wash
    In a separate bowl, whisk together the egg and milk until smooth.

  4. First coat – light
    Toss the chicken wings in the dry mixture for a light, thin coating.

  5. Dip in egg wash
    Dip each wing into the egg-and-milk mixture, letting any excess drip off.

  6. Second coat – thick
    Return the wings to the dry mixture and coat again, this time creating a thicker, more textured crust.

  7. Prepare the hot pan
    Carefully remove the hot baking sheet from the oven. Pour enough olive oil onto the pan to lightly coat the surface. Make sure there is oil underneath where each wing will sit to prevent sticking.

  8. Bake the wings
    Arrange the coated wings on the hot pan, leaving space between each piece (don’t crowd the pan).

  • Bake for 14–16 minutes.
  • Check a wing: if it releases easily from the pan, flip it; if it sticks, give it more time.
  • After flipping, bake for another 10–12 minutes, or until the wings are crispy and cooked through (juices run clear and internal temperature reaches 165°F).
  1. Rest before serving
    Remove from the oven and let the wings rest for 5 minutes before serving. This helps the juices redistribute, keeping the meat tender and juicy.


Homemade Ranch Dressing Dip

  1. Make a garlic paste
    Mince the garlic clove finely. Sprinkle on the kosher salt and mash it into a paste with the flat side of a knife or a fork.

  2. Whisk everything together
    In a bowl, combine the garlic paste, mayonnaise, parsley, dill, chives, soy sauce or coconut aminos, black pepper, vinegar, paprika, cayenne, and hot sauce.

  3. Adjust consistency & chill
    Add milk a little at a time until you reach your desired consistency (thicker for dipping, thinner for drizzling).
    Taste and adjust seasoning as needed.
    Chill for at least 2 hours before serving. Thin with a splash more milk if needed before serving.


Chef’s Tips from Martha

  • Don’t crowd the pan: Give each wing space so the heat can circulate and the crust gets truly crispy. If needed, use a second pan or bake in batches.
  • No parchment, no foil: A heavy, unlined baking sheet gives the best “oven-fried” texture — linings can trap steam and make the crust soggy.
  • Preheat the pan: Starting the wings on a blazing-hot pan plus hot oil is your secret to that fried-style crunch.
  • Let them rest: Those 5 minutes after baking make the wings juicier and more tender — they’ll still be piping hot.

Martha’s journey from professional kitchen to regenerative farm began with a simple conviction: food should nourish both families and the land that produces it. With 25 years of culinary training from the CIA, she knew quality, flavor, and the value of exceptional ingredients. But after encountering 168 acres of chemically damaged soil, she realized her true calling was healing the land that grows our food.

Today, Martha applies the same precision she brought to fine dining to raising cattle that consistently grade Choice to Prime on a 100% grass-fed diet. Her dual expertise as chef and farmer ensures every animal is finished to restaurant standards while contributing to soil regeneration. “Every cow we raise is one less CAFO cow,” Martha says. “Every family we serve experiences what food tastes like when it comes from truly healthy soil.”

Can you deliver?

Yes! We offer free delivery within 15 miles of our farm in Fordland, Missouri. For 16-30 miles, there's a $25 delivery fee. For longer distances, we can arrange special delivery for larger orders.

Do you use antibiotics or hormones?

Never. Our cattle are raised without antibiotics, growth hormones, or chemical treatments of any kind. Healthy cattle raised properly don't need these interventions.
